Via dei Reti è, senza ombra di dubbio, la patria degli hamburger a Roma. A comandare sono i panini di Hamburgeseria. Abbiamo incontrato Dora, una delle proprietarie del locale, e con lei abbiamo parlato della attività aperta nel 2012.

Ciao Dora, cominciamo subito con le domande più spinose: abbiamo saputo che uno dei due locali targati Hamburgeseria e presenti sul territorio romano ha chiuso. Perché?

Questo è proprio un colpo basso! Bene, cercherò di essere breve ma esaustiva: Hamburgeseria a Vicolo del Teatro della Pace era nata a novembre del 2012, a due passi da Piazza Navona, mentre a dicembre dello stesso anno è stata aperta l’altra sede qui a San Lorenzo. La prima è stata aperta fino a fine gennaio, dopodiché ha chiuso i battenti, la seconda invece si è ingrandita a partire da novembre 2014, grazie all’annessione del locale adiacente. Questa scelta ci ha permesso di passare da quaranta a un totale di ottanta coperti e quindi di accogliere con più facilità la numerosa clientela che ogni sera e in particolare nel week-end si riversa all’interno del nostro locale. È stata una scelta dettata da razionalità e funzionalità.

Siamo rimasti molto incuriositi dal nome del vostro locale. Com’è nata l’idea di chiamarvi così?

Devi sapere che l’ideazione del nome che ha avuto una storia piuttosto singolare. Siamo partiti dal termine inglese hamburger e abbiamo deciso di dargli un tocco più italiano aggiungendo alla fine il suffisso –eria, dando vita, appunto, al nome Hamburgeseria.  Solo più tardi ci siamo accorti che la parola, sia nella pronuncia che nella grafica, ricalcava quasi perfettamente il corrispondente termine spagnolo, Hamburgueseria. È per questo motivo che ancora oggi capitano spesso nel nostro locale clienti o turisti spagnoli in cerca di un ristorante tipico spagnolo!

The Walkman Magazine ha già intervistato COHOUSE Pigneto, locale affiliato fra gli altri anche ad Hamburgeseria. Conosciamo già le caratteristiche in comune fra loro, quindi parlaci piuttosto della specificità di Hamburgeseria: cosa la rende diversa dagli altri locali e quindi unica nel suo genere?

Per quanto riguarda il concept del locale, all’inizio pensavamo di prendere spunto dal target proprio di Starbucks, grande catena internazionale di caffetterie, poiché eravamo aperti sin dalle 10 di mattina e avevamo una vasta scelta di prodotti fatti in casa, fra cui anche i dolci tipici della pasticceria americana, il che, inoltre, permetteva  ai clienti di sfruttare l’ambiente per lavoro e per svago grazie alla disponibilità del wi-fi gratuito, proprio come nella famosa catena americana. Dallo scorso anno, invece, abbiamo deciso di restare aperti di mattina solamente la domenica dalle 12 alle 16 per il brunch, per concentrarci maggiormente, nel resto dei giorni, sull’orario della cena e del dopo-cena, dalle 18:30 alle 2 di notte. Siamo aperti tutti i giorni tranne il lunedì e offriamo anche il servizio di take away durante l’intero orario di apertura del locale e quello di delivery dalle 20:00 alle 24:00.

L’idea alla base della nostra filosofia resta sempre la stessa: trasportare la tradizione dell’hamburger gourmet a Roma. L’hamburger americano viene visto, quindi, non più come un tipico piatto da fast-food, semplice e veloce ,ma come un vero e proprio pasto completo, curato fin nei minimi dettagli, preparato con ingredienti freschi e naturali e presentato con raffinatezza ed eleganza . Buono da mangiare e bello a vedersi.

Su cosa si basa in particolare il menù proposto da Hamburgeseria? Quali sono i vostri punti di forza?

Iniziando dagli elementi primari, il pane viene preparato artigianalmente ogni giorno secondo una ricetta creata appositamente da noi per dargli la consistenza adatta ad accogliere adeguatamente l’hamburger e le varie salse, che tendono a bagnare il pane e a rammollirlo. Per quel che riguarda la carne, la nostra è sempre selezionata e ne abbiamo diverse tipologie. Da poco abbiamo introdotto la carne di Kobe e l’Angus. La particolarità dei nostri panini è la possibilità di personalizzarli a proprio gusto e piacimento con l’aggiunta di varie salse e ingredienti extra. Abbiamo aggiunto, inoltre, alcuni burger da noi suggeriti, gli Special Burgers, come Gasperino Il Carbonaro con l’uovo fritto, piuttosto che il Lardellato impreziosito dal lardo di colonnato. Per chi è vegetariano ma non vuole rinunciare all’hamburger abbiamo anche il Veggie, costituito da un burger vegetale a base di orzo perlato e funghi. Ai piatti principali vanno aggiunti gli Special Sandwiches, le patate fritte che possono essere accompagnate con formaggio e bacon croccante, le maionesi e le salse create sempre su nostra ricetta e altri gustosi snack, come la quesadilla di pollo. Infine la nostra offerta comprende anche i dolci tipici americani (cheesecake, cookies, brownies, carrot cake e la domenica anche l’apple crumble) tutti rigorosamente home-made.
Per quel che riguarda la caffetteria, il nostro menù offre sia bibite analcoliche sia vini, birre alla spina, le tipiche bevande che si possono trovare nei bar americani, come il mocha capuccino o gli smoothies, o semplicemente impreziosite con del caramello, vaniglia o cioccolata home-made, e, per finire, centrifughe di frutta fresca e verdura di stagione.

Arriviamo ora all’ultima domanda, quella che ci contraddistingue da sempre. Cosa consiglieresti tu, Dora, a chi vorrebbe investire la sua vita nella propria creatività e nei propri sogni, proprio come hai fatto tu?

Io vengo dal mondo della pubblicità. Mi sono laureata in Economia e commercio, in seguito ho lavorato sei anni al Sole 24 ORE e per altri sei anni sono stata agente per la società che gestisce tutti gli spazi pubblicitari sui mezzi pubblici di Roma. Seguendo questo percorso sono arrivata al punto in cui ho cominciato a sentire il bisogno di nuovi stimoli e così, quando mio fratello e gli altri miei futuri soci mi hanno proposto di aprire questa nuova attività, ho accettato subito e ho deciso di investire parte di me stessa in questo progetto, scegliendo anche di avere un ruolo molto attivo nella gestione. Il bagaglio delle mie esperienze passate mi ha permesso di maturare un rapporto buono e positivo con il pubblico e mi ha insegnato a mettere a proprio agio i clienti, a incuriosirli e a dare sempre più dettagli possibili su quello che tu stai offrendo loro: l’accoglienza e l’educazione prima di tutto. La semplicità e la spontaneità sono altri due qualità fondamentali per questo lavoro, che è sicuramente pieno di sacrifici, ma che può regalare anche tante soddisfazioni. Secondo me, qualsiasi esperienza nuova è un arricchimento, a prescindere dall’esito che essa avrà in futuro. Se la consiglio? Assolutamente sì.

I’ve been walking along Via dei Reti many times and there was always one reason: the Hamburgeseria’s delicious sandwiches.

I interviewed Dora, one of the owners of the restaurant, on a cold Friday night. After some problems of orientation to find the way, here I was in front of the windows of the restaurant that was already beginning to be filled by the first hungry customers. Dora asked me to make the interview outside to have more peace and less bothers. I agreed, and so our chat began. In the meantime, I took the opportunity to taste one of their legendary burgers, the “Black AngusUSA (200g. Black Angus meat coming from the Nebraska and Texas’ ranches, lettuce, tomato, cucumber, homemade bbq sauce): I love my job!

Hi Dora, let’s start with the thorniest questions: I heard that one of the two restaurants branded Hamburgeseria here in Rome closed. Can you tell me why?

That is just a cheap shot! Well, I’ll try to be brief but comprehensive: the Hamburgeseria in Vicolo del Teatro della Pace, a few steps from Piazza Navona, was opened in November 2012 and in December of the same year was inaugurated this restaurant, here in San Lorenzo. The first lasted operative up to the end of January, after which closed its doors, while the second has expanded from November 2014, with the annexation of the adjacent room. This choice allowed us to grow from a total of forty to eighty covered, and thus to more easily accommodate the many customers that every night, and especially on weekends, come to our restaurant. It was a choice of rationality and functionality.

I am very intrigued by the name of your restaurant. How did this name come to your mind?

I have to tell you that the concept of this name has a rather peculiar story. We started from the word “burger”. We wanted to give it a touch of Italian style and we added the suffix -eria, actually creating the name “Hamburgeseria”. Only later we realized that the word, both in pronunciation and in graphics, traced almost perfectly the corresponding Spanish term, Hamburgueseria. That is the reason why often, Spanish customers end up here searching for a typical Spanish restaurant!

The WalkMan Magazine has already interviewed the COHOUSE Pigneto, a club affiliate among others to the Hamburgeseria. We already know their common features, then I would like to know the specificity of the Hamburgeseria. What makes it different from other restaurants?

As for the concept, initially we wanted to copy somehow the Starbuckstarget, the big international chain of café, because we were open since 10 in the morning and we had a wide selection of home-made products, including also American sweets pastries, allowing customers to use the bar for business and pleasure, thanks to the availability of free Wi-Fi; just like in the famous American café. However, since last year we decided to stay open in the morning only on Sundays, from noon to 4 pm for brunches, in order to focus, during the rest of the week, on the dinner and after-dinner, from 6:30 pm to 2 at night. We are open every day except Mondays, and we also offer a take away service from 6:30 pm to 2:00 and the delivery service from 8:00 pm to 0:00.

The basic idea of ​​our philosophy remains the same: bringing the tradition of the gourmet burger in Rome. The American hamburger is seen, therefore, no longer as a typical dish from fast-food, fast and easy, but as a real full meal, refined to even the smallest detail, prepared with fresh, natural ingredients and presented with refinement and elegance. Good to eat and beautiful to behold.

What is the basis of the menu proposed by the Hamburgeseria? What are your strong points?

Starting with the primary elements, we use homemade bread prepared every day according to a recipe created specifically to give it the right consistency and to properly contain the hamburger and the various sauces, which tend to soak the bread and soften it too much. As for the meat, ours is always selected and we have different kinds of meat. Recently, we introduced Kobe and Angus meat. The peculiarity of our sandwiches is the possibility to customize them according to your taste, by adding various sauces and extra ingredients. We also added some burgers suggested by us, the Special Burgers, such as Gasperino Il Carbonaro with fried eggs, or the Lardellato enhanced by lard colonnade. Vegetarians too may want their hamburger, thus we have the Veggie, consisting of a vegetable burger made with pearl barley and mushrooms. In addition to the main courses there are the Special Sandwiches, the French fries that can be accompanied with cheese and bacon crisp, mayonnaise and sauces still created with our recipe and other tasty snacks, such as chicken quesadilla. Finally, our offer also includes typical Americans pastries (cheesecake, cookies, brownies, carrot cake and on Sundays also the apple crumble). Everything is prepared by our chef Michael J. Rosenfeld, native from New York. As for the cafeteria, our menu offers both soft drinks and wines, draft beers and the typical drinks that can be found in American bars, like mocha cappuccino, smoothies, homemade chocolate and finally extracted of fresh fruit and in season vegetables.

Now we have arrived to the last question, the one that has always identified us. Dora, what would you suggest to those who would like to invest their life in creativity and in their dreams just like you did? Tell me your story.

I come from the world of advertising. I graduated in Economics. Later, I have been working for six years at the Sole 24 ORE and for other six years I worked as agent for the company that manages all the advertising spaces on the public transport in Rome. By following this path, I came to the point where I began to feel the need for new ideas. So, when my brother and my current partners asked me to start this new business, I immediately agreed and I decided to invest part of me in this project, also choosing to have a very active role in the management. The knowledge of my past experiences helped me to develop a good and positive relationship with the public and taught me to put customers at ease, to arouse their curiosity and to give always lots of detail about what you are offering them: hospitality and politeness first. The simplicity and spontaneity are two fundamental qualities for this kind of job, which is definitely full of sacrifices, but which can also give a lot of satisfaction. In my opinion, any new experience enriches, no matter what the outcome it will have in the future. Do I suggest this kind of experience? Definitely, I do.
